Jam and Cream Filled Sponge Cakes

I love creating new recipes. I’m always in the kitchen, experimenting with ingredients. Trying to come up with something new.


A few days ago, I invented what might be my favourite cake recipe yet. It was jam and cream filled sponge cake. These cakes are very soft and rich. Perfect for dessert or a special afternoon tea. Today I’d like to share my recipe with you!






110g of butter

1/4 cup of rice malt syrup (or honey)

2 eggs

2 cups of self-raising flour

1tsp of vanilla essence (optional)

1/4 cup of milk

Jam (I make my own using this recipe)



Preheat oven to 180c.

Beat butter and rice malt syrup together until smooth. You can either do this by hand or use a food processor. Add eggs to the mix.

Stir in flour. Then add in vanilla essence and milk. Mix everything together.

Put tablespoons sized dollops of mixture onto a tray.

Bake for 10-15 minutes or until golden brown.

Spread jam and whipped cream onto one of the cakes. Put another one on top. Repeat for the rest of the cakes.

Eat and enjoy!
